Quick Creamy Chicken & Mushroom Stir Fry

This was put together with no thought really. Quick post in the Facebook group as I do. But it did cause a stir...so here's the recipe. Originally I made this with cream. But I have also included the macros for coconut milk. My husband enjoyed the coconut version more, as it wasn't as rich but equally tasty
So I have included the macros for both coconut milk & double cream. I highly recommend if you go for the double cream, have it as 6 portions, it's very very high in fat!

With Coconut Milk
For the whole recipe:
2351 Calories / 42g Carbs / 207g Protein / 154g Fat

4247 Calories / 29g Carbs / 212g Protein / 367g Fat

708 Calories / 4.9g Carbs / 35g Protein / 61g Fat

Tips & Equipment:
1 very large non stick saucepan

Ingredients
600g Chicken - small but chunky chopped
150g Bacon - roughly chopped
900g Mushrooms - small but chunky chopped
300g Leeks - roughly chopped
200g Spinach
400g Coconut Milk or Cream
120g Walnuts
15g Butter
15g Olive oil
1.5 tsp Garlic paste or 3 large garlic cloves
Seasoning - I used 1 tsp salt and 1/4 tsp freshly ground pepper
3 tsp Curry Blend
Optional extra
Directions
Add the butter and oil to a large non stick saucepan and heat up until melted
Add the leeks, chicken & bacon and fry for about 5 minutes
Now add the mushrooms & fry until everything is cooked - approx 10 minutes
Add the garlic, walnuts & spinach & fry for a further 2 minutes
Finally add the coconut milk / cream & seasoning. Stir through & cook until piping hot
