I love the idea of a Yorkshire Pudding, with the meal contents safely packed into it, pizza style. Hope you enjoy it as much as we do! :-)

This dish is designed for 2 portions, but if you'd like it as a snack I've put the macros for 4 portions as well

For the whole recipe:
1252 Calories / 17g Carbs / 66g Protein / 102g Fat

2 portions - each portion contains:
626 Calories / 8.6g Carbs / 33g Protein / 51g Fat

4 portions - each portion contains:
313 Calories / 4.3g Carbs / 17g Protein / 26g Fat
~
Tips & equipment list:
Hand blender or Bullet
2 x non stick baking tins about 7 inches circular
Silicon paper, cut to the size of your tin
Small non stick frying pan
This does freeze

Ingredients
1 batch Yorkshire base (follow this link to take you to the recipe)
200g Lamb Mince
50g Leeks - chopped finely
30g Tomato Puree
30g Courgette - grated
1/4 tsp Garlic Paste
1/4 tsp Curry Blend (or other good quality curry powder)
10g Olive oil
Seasoning - 1/4 tsp Salt & a good gring of pepper
30g Grated Cheddar or I really fancied Red Leicester

The Topping
Directions
Yorkshire Pudding
1 batch Yorkshire base (follow this link to take you to the recipe & please follow those instructions)
The Topping
Add the olive oil to the saucepan and bring to temperature, then add the leeks and fry about 3-5 minutes or until translucent but not browned
Now add all the other topping ingredients (APART from the cheese) to the pan and cook until the mince is cooked. This will take about 10 minutes
When your base is cooked, spread the lamb topping over the Yorkshire pudding
Sprinkle over the cheese and pop back in the oven for about 5 minutes, or until the cheese has melted
