Paprika & Thyme Lamb Joint

Ingredients
Lamb Joint - Leg or Shoulder (we used a boneless leg joint)
Garlic Cloves - as many as is needed! We used 6.
2 tbsp Olive Oil
1 tsp Paprika (hot or smokey)
1 tsp Dried Thyme
1 tsp Salt
Directions
Preheat the oven to 170°C.
Place the lamb joint in an oven proof dish and use a knife to score holes across the top.
Remove the skin from the garlic cloves (and chop them in half if they’re quite large) and place the garlic into the slots in the top of the lamb.
In a small bowl, mix the olive oil, paprika, thyme and salt. Once combined, pour this on top of the lamb and massage it in.
Tightly cover the oven dish with foil and place in the oven to roast. Time will vary depending on the joint - we work with 45 minutes per kg weight.
