The pumpkin can be swapped for butternut squash, if your carbs allow?

For the best spaghetti effect, using a spiralizer is best. Or this is time consuming, but cut the pumpkin into super thin strips

Now because this is a seasonal vegetable, I've included the macros for Butternut Squash & Swede. Yes Butternut is a much higher carb vegetable, but I wanted these selection of recipes to be obtainable all year round. Swede is perfect

Using Butternut Squash, instead of Pumpkin:
Makes 4 portions - each portion contains:
519 Calories / 16.1g Carbs / 30.9g Protein / 37.1g Fat

Using Swede, instead of Pumpkin:
Makes 4 portions - each portion contains:
496 Calories / 9.8g Carbs / 30.1g Protein / 37.5g Fat

Ingredients
800g Pumpkin - spiralized
300g Bacon - diced
6 Medium eggs
60g Parmesan - grated
2 garlic cloves, chopped finely
20g butter
10g Olive oil
5g Fresh basil - optional
Salt and Pepper
Directions
Add oil to a large non stick pan and fry the bacon for approx. 3 - 5 minutes, stirring occasionally
Now add the butter, spiralized pumpkin and garlic to the bacon pan and fry until cooked, approx. 5 - 10 minutes
In a separate bowl, whisk up the eggs, parmesan and salt and pepper
Once cooked, take the pumpkin off the heat and stir in the egg mix
Allow the heat of the pumpkin to cook the egg mix, but don't worry if it ends up scrambling. It'll still taste fabulous
Serve immediately, although this does reheat beautifully too
Finally sprinkle some basil and extra parmesan over the top
