Ingredients
Follow the recipe for Rice Base Dish
200g Red Pepper - Chunky chopped
600g Fish of your choice, or seafood mix - keep it whole as it will naturally flake whilst being cooked
400g Tinned tomates
3tsp Paprika
50g Olives - halved
1 Lemon (1/2 to squeeze in the recipe & 1/2 to cut into 4 wedges)
25g Fresh parsley
Salt & Pepper
20g Olive oil
Directions
Follow the instructions for the Rice Base Dish
In a non stick saucepan, add the tinned tomatoes, olives, paprika, salt and pepper and fish. Bring to boil and then turn down to a gentle simmer until cooked through. Approx. 15 minutes
Meanwhile in a frying pan add the oil and heat up until sizzling then add the peppers. Fry until completely cooked
Once cooked, add all the ingredients, including the fresh parsley to the Rice Base recipe and stir through
This can be quickly stir fried to reheat the rice dish or popped in the fridge
To reheat, either stir fry or microwave. If reheating in the oven, make sure you cover the dish with foil, so it doesn't dry out
