Ingredients
500g Mixed coloured peppers - chunky chopped
30ml Olive oil
1 tsp Salt
Freshly ground pepper
4 tsp Ketoroma Curry Blend (or another curry powder of your choice)
2 tsp Fresh ginger or 1 tsp Ground ginger
35g Fresh Corriander - this will be mixed after the rest of the ingredients are cooked
40g Greek Yogurt
Optional Extra
Directions
Preheat the oven to190°C (Ninja Grill - bake at 180°C).
Into a large bowl, add all the ingredients apart from the coriander and (if you're using it) the yogurt. Mix well.
Pop the mix into an ovenproof dish, and spread out evenly.
Bake for 20-30 minutes, until cooked to your preference.
Add the roughly chopped coriander and mix.
Serve hot or cold.
Optional Extra
This was an idea from one of our members Debra Phillips: After everything is cooked, stir in the Greek yogurt. Sounds lovely :-)
