Large non stick saucepan & medium non stick frying pan
If you're making omelette strips instead of the poached egg, then you'll also need either a hand blender or a bullet

This does freeze - but only if you don't add the egg - this can be done fresh, once cooking from frozen
Ingredients

1 batch Soup Base (follow this link to take you to the recipe)

300g Chicken - Chunky chopped

75g Mushrooms - Chunky chopped

2.5 tsp Fresh ginger / Lazy ready chopped ginger or 1.5 tsp Garlic paste

25ml Liquid Aminos (this is a soy sauce replacement)

2 Large eggs - if you are making this soup with poached eggs, rather than the omellete strips, then you will need more eggs, depending on how many portions you'd like this recipe to be for (And add the extra macros (1 large egg is approx 79 Calories / 0.1g Carbs / 7.6g Protein / 5.4g Fat)

100g Fresh or ready rated Mozzarella - I've put the macros in for ready grated, it'll be less if it's fresh

75g Spring onions - Chunky chopped

The Base Recipe
Follow the directions for Soup Base recipe (follow this link to take you to the recipe) *** Watch out for direction number 5 in the base recipe where you add the Chicken, mushrooms, ginger & Liquid Aminos

Once you have followed the base recipe, now follow these instructions
Meanwhile you have 2 options in this recipe to either create omelette strips or poached eggs - if you'd like to make the poached egg version, then you'll need extra eggs, depending on how many portions you'd like this recipe to be
Or Omelette Strips - if you want to freeze this soup, make the omelette part, fresh
If you'd like to make omelette strips, whisk up your eggs & mozzarella with a blender
Grease the pan and bring to temperature & cook your omelette in the normal way
Allow to cool, until it's cool enough to handle
Roll it up and cut into strips, please refer to the photo - to be added
Poached Eggs - if you want to freeze this soup, make the poached egg part, fresh
You have 2 options - either cook it straight in the soup, or my preferred option, cook them for about 3 minutes in a seperate pan of boiling water
Finally
Check that you're happy with the seasoning of the soup
When you eggs are done and you are ready to dish up .....
Serve up the soup and divide the omelette strips or poached eggs amongst the bowls
Sprinkle with the chopped spring onion
If it's the poached egg, now sprinkle over your mozzarella over each bowl
