For the whole recipe:

Large non stick saucepan
This does freeze
Ingredients

300g Swede - Chopped small
-
200g Winter greens - I used curly kale - chopped small
-
150g Celery - Chopped small
-
100g Leek - Chopped small
-
100g Courgette - Chopped small

30g Olive oil
-
30g Butter (to keep this dairy free, just use 30g more olive oil or coconut oil)

1/2 tsp Garlic paste or 2 garlic cloves
-
1/2 tsp Curry Blend
-
1/2 tsp Thyme
-
2 Vegetable stock cubes
-
1Ltr Boiling water
-
Salt & pepper to taste - I used 1/2 tsp salt & !/4 tsp pepper
Directions
*** If you'd like to speed up the cooking of this dish, prep your swede first and either steam it or boil it for about 10-15 minutes (or until you've prepped all your other vegetables, or pop it in a microwave bowl with a little water and cook on full power for about 5 minutes ***
Pop the oil and butter into a large non stick saucepan. Once sizzling add all your vegetables and fry for about 5 minutes. This is not to brown, it's purely to bring out its flavour
Now add the garlic, curry powder & thyme. Stir through and cook for 2 minutes
Add the boiling water and stock cube & stir
*** If you're making the Chicken & Egg add the chicken, mushrooms, ginger and Liquid Aminos now
*** If you're making the Chowder add the fish, bacon & cayenne pepper now
*** If you're making the Vegetable Smooth & Creamy, follow to the end of this recipe & then flip back to the Vegetable Smooth & Creamy
Give whichever soup you're making a good stir. Bring to boil and turn down to a medium simmer (half way between low & Medium)
Cook until all the vegetables (& meats, if any) are cooked. About 30 minutes if the swede is pre cooked or approx 45 minutes from scratch
And that's the base done, or partway through one of the other recipes. It's a really nice soup on its own, but if you're partway through one of the other recipes, now flip back to whichever one you're making
