The reason I came up with the cheats version of this recipe is because my family hate bones in their meals. So no you don't get the full flavour from the skin and bones, but it's super family friendly.
Also lots of traditional dishes ask for rice in this soup, so I've compromised with a small amount of Soup & Broth mix. Below I have the macros, with and without this ingredient :-)
Makes 4 VERY large portions - each portion contains:
241 Calories / 6.1g Carbs / 24.6g Protein / 12.9g Fat
Without the Pearl Soup & Broth mix
Makes 4 portions - each portion contains:
232 Calories / 4.2g Carbs / 24.3g Protein / 12.9g Fat

Ingredients
500g Chicken Thighs, sliced into small chunks (approx. 2cm)
300g Leeks, sliced thinly
30g Soup & Broth Mix (This is the uncooked weight and it's a mix of pearl barley, yellow and green split peas, marrowfat peas and red split lentils) washed and drained
100g Carrots, Peeled and grated
Well seasoned to taste
Directions
Add to a large pan all your ingredients
Add cold water, enough to generously cover all the ingredients
Bring to boil and then turn down to a simmer and pop the lid on
Make sure it doesn't boil dry and has plenty of fluid. Refer to the picture for how much liquid should be left :)
Let this gently simmer for about 1 hour, stirring occasionally
Nutrition per serving
Calories 246, Carbs (net) 6.7 grams, Fat 13 grams, Protein 24.7 grams
