Curry Sauce

A really quick sauce. Pour it on your vegetables, boiled eggs and basically whatever you fancy!
In Michele's Keto Kitchen, we had it as part of our Chinese night and poured it over our Pork Bites
For the whole recipe: If you want to decide on your portion size

Ingredients
150g Tinned tomatoes
150g Coconut milk
-
10g Curry Blend
1/8th tsp Garlic powder
Seasoning
Xanthan gum or Arrowroot - If you're recording your macros, don't forget to count the carbs in this ingredient
Optional Extras for thickening
Directions
In a food processor or Bullet, put all of the ingredients and whiz until smooth
In a small saucepan bring to almost boiling, then turn down to a gentle simmer for 5 minutes. If you'd like the sauce thicker, simmer for longer. it will thicken once cooled

For the arrowroot, mix a teaspoon with a tiny bit of water, then stir into the sauce until you are happy with the consistancy. For the Xantham gum, you don't need much, and the texture could become quite gloopy if you add too much
Storage & extra ideas
I store mine in the fridge in a kilner jar, or a screw top glass jar
Extra season ideas
Add coriander just before you blitz or 2 tsp peanut butter once cooking
