Will's Chilli Oil

This is a particular oil that I use lots in my day to day cooking. It's instantly full of flavour. My son made it for me with his home grown chillies. But not everyone has access to this luxury (thanks Will :-) ). The strength of the oil, depends on the strength of your chillies. The chillies this time were called Basket of Fire...lol so you can imagine, this time it blue my head off! So you decide and also, the strength of the chilli flavour intensifies as it matures. If it is too strong, 2 choices to rectify it...use less in the cooking or water it down with more olive oil

Tips & Equipment:
300ml bottle with a lid - I used a Kilner style bottle
You could even use the bottle, that the olive oil came in, if you don't want to get too fancy

250 - 300ml Olive oil
5 - 10g Dried chillies - either your own or bought chilli flakes
1/2 tsp Kashmiri spice
1 sprig Rosemary
Add all the dry ingredients first then top it up with the olive oil.
Give it a shake & that's it!
Always shake the bottle before you use it - not to self, always make sure the lid is on tight!
