Ok, this little pudding / cake was created as part of my Tuesday Live. I love to do whatever National Day it is. This day was National Raspberry Popover Day. To quote my research...
"National Raspberry Popover Day on May 3rd each year recognizes a dish similar to Yorkshire pudding. The day is also referred to as National Raspberry Tart Day.
Popovers earn their name by their characteristic popping over the edge of the pan as they bake. They can be enjoyed in both sweet and savory combinations. The primary ingredients in popovers are flour, eggs, milk, butter, salt and butter. Raspberries make popovers sweeter. Whether sweet or savory, most people enjoy popovers at breakfast time"

Ingredients

1 batch Yorkshire base (follow this link to take you to the recipe) - use this link purely for the recipe ingredients, then pop back here for the instructions, as it's a completely different method for this recipe :-)
Also Don't worry about weighing the eggs. Just use 2 large eggs and separate the whites from the egg yolks

30g Truvia / Natvia / Pure Via Sweetener - my preference is the icing sugar version

150g Raspberries

1 tsp Truvia / Natvia / Pure Via Sweetener - my preference is the icing sugar version - Just a little sprinkling for decoration
The Yorkshire Pudding Base
The Final Ingredients
Directions
Oven 180°C or Ninja 170C
Add lard / cooking coconut oil to baking tins and pop in the oven for 5 minutes
Whisk up the egg whites to soft peaks
In a separate bowl whisk up the milk, cream, arrowroot & the sweetener
Now carefully fold your ingredients into the egg whites, you want to try and keep that air in, until it's completely well mixed
After 5 minutes, remove the baking tin from the oven carefully. Check that the oil is hot enough by dropping a tiny amount of the mix into the oil. The oil should bubble around the mix. If not, return the tin to the oven for a few more minutes.
When oil is ready poor the mix into the tin
Sprinkle the raspberries over the top - they will sink in, but that's ok
Cook for about 15 - 20 minutes in the Ninja & about 20 - 25 minutes in a regular oven
Managing your expectations. These will grow & then shrink back. This will not take away from the fabulous taste
A little sprinkling of Truvia icing sugar and it looks even more fabulous
