Festive Apple Crunch

Yep it's apple, so long as it's cooking apples, it keeps the carbs lower. Enjoy, maybe with a little Custard too :-)
It's a 1 bowl mix, then cook!

For the whole recipe:
1536 Calories / 40.8g Carbs / 29.4g Protein / 135.6g Fat

Makes 6 portions - each portion contains:
256 Calories / 6.8g Carbs / 4.9g Protein / 22.6g Fat

Ingredients
300g Cooking Apple - Peeled, cored & chunky chopped
150g Mixed nuts (we used pecans, hazelnuts & flaked almonds) - chunky chop by hand - do not blitz in the food processor
60g Melted butter
1 tsp Vanilla extract
1/2 tsp Ground cinnamon or Mixed Spice
Directions
Preheat the oven to 190°C (or Ninja to 180°C).
Add all your ingredients to a bowl and mix well.
Taste the mix in case you need to adjust the sweetener, then spread evenly across an oven dish.
Bake for 25-30 minutes.
As a cake topping...
Make a vanilla sponge mix using the Classic Vanilla Cake recipe in a 7" spring-form tin and before baking, sprinkle on some Festive Apple Crunch to cover the top of the cake. Then bake until the cake has set.
Recipe Notes
This reheats beautifully in the Ninja in about 5 - 7 minutes and about 10 minutes in a regular oven, or just munch on it cold, it's lovely
