Phirni or Kheer is a type of rice pudding from Southern Asia, made by boiling milk/cream, sweetener and rice and nuts can be added to enhance the flavour
So this is where Chia seeds come in to give it that lovely rice pudding texture. To me it reminds me a lot of Tapioca
For the whole recipe: If you want to decide on your portion size

Per portion (4 portions)
154 Calories / 1.1g Carbs / 1.8g Protein / 15.7g Fat

Ingredients
15g Chia Seeds
80ml (80g) Water
100ml (100g) Double Cream
100ml Your favourite milk (I used Unsweetened Almond Milk)
15 - 20g Truvia / Natvia / Pure Via Sweetener (or 45 - 60g Erythritol)
10g Ground Almonds
6 Cardamom pods - opened up and seeds emptied (discard shell)
Directions
Mix the water and chia seeds together and allow to soak for 10 minutes
Add to a non stick saucepan all the ingredients, including the fully soaked chia seeds (which should have a lovely gloopy jelly like texture)
Bring up to almost boiling, but not quite. Turn down to a gentle simmer for about 10 minutes, occasionally stirring.
Transfer to small ramekin dishes and allow to cool in the fridge
