Silky Chocolate Mousse
With an extra ingredient of orange essence, and a little grating of orange zest on top, you can transform this recipe into a whole new pudding... or layer with butterscotch sauce too :)

368 Calories / 4.6g Carbs / 8.8g Protein / 34.3g Fat
75g 85% Dark Chocolate
2 Medium Eggs, separated & the whites whisked up to soft peaks
20g Unsalted Butter
125ml/g Double Cream, whisked to soft peaks (Do not over whisk)
Optional: 10g Truvia / Natvia / Pure Via Sweetener - Make sure this is ground to a fine powder (you don't want a grainy mousse)
Optional: Orange Essence
Add the chocolate and butter to a microwaveable bowl.
Melt in 30 second blasts, give it a good stir and put to one side and allow to cool slightly.
If adding sweetener and / or orange essence, add this now to your egg whites and whisk in.
When the chocolate has cooled (it should be just warm to the touch) stir in the egg yolks
Now add the cream and beat well, until smooth.
Gently fold in half of the egg whites.
And finally, fold in the rest of the eggs whites, gently fold until totally combined and silky smooth, making sure that you get right down to the bottom of the bowl!
Spoon or pipe the mousse into a serving dishes and chill.
If you wish, layer in berries and whipped cream, or even some lava cake, to create a lovely chocolate trifle :-)
