Why have I done this crustless? Because why not?! I spent ages searching the perfect pastries, and there are some great keto recipes out there, I love this one for instance Savoury Pastry. Or you could use corned beef slices, which I also love. But what I particularly love about these recipes, is its simplicity, but with all the flavour. They don't need pastry to stand up on their own. For the whole recipe:
2351 Calories / 20g Carbs / 120g Protein / 198g Fat

4 generous portions - each portion contains:
588 Calories / 5.1g Carbs / 30g Protein / 50g Fat

6 portions - each portion contains:
392 Calories / 3.4g Carbs / 20g Protein / 33g Fat
~
Tips & equipment list:
Non stick saucepan
Large mixing bowl
Spring based cake tin aprox 7 - 8 inches
This does freeze

Ingredients
1 batch Crustless Quiche Base (follow this link to take you to the recipe)
100g Spinach - - chunky chopped
100g Sundried Tomatoes - Finely chopped (Mine were 9.5 carbs per 100g)
100g Feta - crumbled with your fingers

The Base recipe
1 batch Crustless Quiche Base (follow this link to take you to the recipe and please follow those instructions) - Stop after you have done instruction no.7 and come back to this recipe
Now the final parts of the recipe
Add the spinach & sundried tomatoes to the base mix & stir through - hold back a little sundried tomato for decoration
Pour into your prepared tin or dish
Crumble the feta over the top (it will sink into the base mix) & decorate with your left over sundried tomatoes
Bake for about 30 - 40 minutes, or until it's not wobbly
This will rise, then shrink back a little - just managing your expectations :-)
