Beef Stew & Dumplings

My thoughts about this recipe....it's the final crisping up of these dumplings, that makes them extra special
This recipe has been designed for the Ninja, but it'll work in a slow cooker, or on the hob. Just remember to do the final stage with the dumplings! I've adapted the recipe depending on how you might be cooking it

Ingredients

600g Stewing beef steak, cut into approx. 2cm chunks

10g Arrowroot, well seasoned

20g Olive oil
-
100g Leeks finely chopped
-
50g Carrot, chopped
-
250g Closed Cup Chestnut Mushrooms, halved

400g Tin chopped tomatoes
-
200ml Beef stock, made with 1 stock cube
-
1 Bay leaf or 2 tsp Mixed herbs
-
40g Horseradish sauce but you can swap this for mustard

20g fresh flat-leaf parsley, chopped
-
50g Beef Suet
-
50g Ground Almonds
-
5g Coconut Flour
-
45g Milled Linseed
-
1 tsp Xanthan Gum
-
1 Tbsp Fresh Parsley, chopped

30g Grated Cheddar
-
Salt & Pepper
-
45g Water
Dumplings
Directions
Beef Stew
Add 10g of olive oil to the pan (Sear-med) and lightly fry off the vegetables for approx 5 minutes and then remove from pan and set aside
Now toss the cubed meat into the seasoned arrowroot
Add 10g olive oil to the pan and fry off (SEAR-med) the meat for approx 5 minutes
Now add to the pan, the fried off (seared) vegetables, tinned tomatoes, 250ml stock and bayleaf or mixed herbs and seasoning
Slowcooker option
Cook on low for approx 6 hours. In the last hour of cooking, add your mushrooms and horseradish and stir in well and gently place the dumplings on top (refer to dumpling recipe and directions below).
On the hob option
Bring to boil and turn down to a gentle simmer, cover and cook for approx 2 hours. In the last hour of cooking, add your mushrooms and horseradish and stir in well and gently place the dumplings on top (refer to dumpling recipe and directions below).
Ninja part 1
SEAL - Pressure cooker for 45 minutes, then slow release for 15 minutes, if still on slow release after 15 minutes, quick release. Watch those fingers! Now turn it to SEAR, Med/Low
Dumplings
Whilst the the meat dish is cooking, make up the dumplings
Add all the ingredients to a large bowl and mix well, until a dough ball forms
Divide into 4 equal flat dough balls
Ninja part 2
Now Ninja is on SEAR, Med/Low
Add mushrooms, Horseradish, extra seasoning if needed. Stir well. Carefully place the dumplings on top. Pop the lid on and cook for 1 hour
Carefully remove the Dumplings and pop on a plate. Stir the beef stew. Carefully pop the dumplings back on top
Air Crisp 15 minutes - this is to give the dumplings a lovely crispy top!
Not using a Ninja?
But would like crispy dumplings. Pop them under the grill for approx. 10 minutes*
*Either pop the pan under the grill with the stew and dumplings OR remove the dumplings and pop them only under the grill
