This is a winter classic that never fails to amaze us.
Makes 4 portions - each portion contains:
351 Calories / 9.8g Carbs / 36g Protein / 19g Fat
Feel free to boost the calories by having a larger portion, or serve with a side dish like buttered cabbage to boost the fat.

Ingredients

40g Butter
-
100g Leeks
-
200g Courgette
-
500g Minced Beef (5%)
-
1 Beef Stock Cube in 200ml Boiling Water
-
800g (1 medium head) Cauliflower Florets
-
1/2 tsp Thyme
-
40g Soft Cream Cheese
-
Seasoning to taste
Directions
Preheat the oven to 180°C.
Heat the butter in a large pan or wok over a medium heat. Dice or slice the leek and add to the pan. Fry for 2-3 minutes until soft, not brown.
Add the diced courgettes and fry for 2-3 minutes.
Either remove the leek / courgettes from the pan or push to the side. Add the minced beef.
Cook the beef until brown and combine with the leek / courgette.
Add the beef stock. Bring to boil, then reduce the heat to simmer uncovered.
Break the cauliflower into small florets. Boil for 8-10minutes in a separate pan and drain well. Return them to the pan and add the seasoning and cream cheese. Mash them together.
Once the meat stock has reduced, transfer the mix to an ovenproof dish and top with the cauliflower mash.
Finish in the oven for 20-25 minutes to allow the mash to brown.
Serve with some fried kale... proper winter grub!
