I'm so pleased with this delightful recipe. A welsh loaf, that's a little like cake, but no sweeteners are used. It toasts really well too and it's also very nice with a bit of butter too

I've never tried Bara brith, so apologies for those that say it's nothing like it......if it's not, it's still a wonderful fruit loaf

i used a tiny bread tin, this size was perfect for the job. lined with silicone paper

Ingredients

100g Boiling water
-
2 Regular Tea bags
-
1 Orange zest & Juice (Aprox 25g of ther juice)

30g Mixed fruit
-
100g Ground almonds
-
1/4 tsp Baking powder
-
Pinch Salt
-
2 tsp Mixed spice
-
1 Large egg
-
50g Melted butter
Directions
Oven 170C or 160C in the Ninja grill or the Ninja foodie
Brew your tea for 5 minutes and then remove the tea bags
Add your mixed fruit and orange zest. Let it soak in the tea for a minumum of 30 minutes. Overnight even better, but not essential
Drain off tea, but keep the the fruit and orange zest
Add all the dry ingredients to a bowl - Ground almonds, baking powder and mixed spice and give it a quick mix
Now add all the rest of the ingredients, including the soaked mixed fruit and orange zest and 25g orange juice
Mix well
Pour all the ingredients into your lined mini loaf tin.
Bake for approx 25 minutes, until a skewer popped in the middle comes out clean
