What is this crust? I would say it's across between a pastry & bread. Soft in the middle and crusty on the outside

This is part of a range of recipes "1 Dish 4 Ways". For this recipe, 1 Pie Crust 4 different fillings.....the other 3 - Mince Beef & Leek Pie, Chicken & Vegetable in Gravy Pie and finally Spinach & Feta Pie

This is a high fat, high calorie recipe, so I've divided it into 3 categories: Whole recipe macros, 4 portion macros and 6 portion macros (the macros are including the pie crust)

Chicken & Vegetable in Gravy Pie

For the whole recipe:
5385 Calories / 55g Carbs / 306g Protein / 433g Fat

Makes 4 individual portions - each portion contains:
1346 Calories / 14g Carbs / 77g Protein / 108g Fat

Makes 1 big pie & can be divided into 6 smaller portions - each portion contains:
897 Calories / 9.1g Carbs / 51g Protein / 72g Fat
Ingredients
- 1 batch Pie Crust (follow this link to take you to the recipe)

400g Chicken - Small roughly chopped

200g Cooked Ham or Gammon - Small roughly chopped

300g Leeks - Small roughly chopped

20g Butter
-
20g Olive oil
-
1/2 tsp garlic
-
250ml Milk
-
150ml Double Cream
-
1 Chicken stock cube
-
20g Parmesan
-
20g Arrowroot (mixed with about 30ml water to create a thickening agent)

Salt & Pepper (I added 1/2 tsp salt & 1/4 tsp pepper)

The Filling
Add the butter & Olive oil to a large pan and fry the leeks for about 5 - 10 minutes, until it's softened but not browned (almost translucent)
Now add the chicken & fry until cooked (about 5 - 10 minutes)
Add all the remaining ingredients APART from the arrowroot mixed with water, stir well and bring up to almost bubbling and turn down to a gentle simmer
Now add the arrowroot and stir through the sauce in the pan. Allow to thicken. If you'd like it a little thicker, either add more arrowroot, mixed with a little water in the same way. Or if you'd like to keep the carbs lower, add a sprinkling of ready grated mozzarella & stir through until it thickens
Now pour into your prepared Pie Crust base and go back to the Pie Crust recipe and instruction no.8 onwards
