Makes 2 portions - each portion contains:

Ingredients
30ml Olive Oil
300g Diced Chicken Breast
50g Mushrooms, sliced
50g Red Onion / Shallots, sliced
50g Carrot, sliced
100g White Cabbage, sliced
50g Bell Pepper, sliced
50g Courgette, sliced
1/2 tsp Garlic Puree
1/2 tsp Ginger Puree
1 tbsp Sesame Seeds
Directions
Heat the oil in a large pan and add the chicken. Fry for 2-3 minutes and turn to brown on all sides.
Add all of the sliced vegetables and fry for 1-2 minutes.
Add the garlic and ginger. Combine thoroughly.
Cover the pan with a lid and cook for 5 minutes over a medium heat. Add a little water if needed to prevent the veg from sticking to the pan.
When you're ready to serve, season, sprinkle with sesame seeds and enjoy :)
