Makes 4 portions - each contains:
439 Calories / 1.8g Carbs / 47g Protein / 26.8g Fat / 0.8g Fibre (already deducted from carbs)
These macros are for using mushrooms & mascarpone.
4 Chicken Breasts (150-200g each)
8 Rashers (around 160g) of Streaky Bacon
100g Mushrooms or Bell Pepper
100g Mascarpone (this can be replaced with Soft Cream Cheese)
Handful of fresh parsley, finely chopped
Salt & Pepper
Flatten or butterfly the chicken breasts and grill for around 10-15 minutes until fully cooked. Alternatively, start the chicken breasts off in a pan and transfer to the oven to finish cooking.
Heat the butter in a medium sauce pan over a gentle heat.
Chop the bacon and shallots - add these to the pan and allow to cook gently.
Chop the mushrooms / peppers and after a few minutes, add them to the pan along with the bacon & shallots.
Once the bacon is cooked and the shallots & peppers have softened, add the mascarpone to the pan and let it melt into a sauce.
If your mascarpone is quite thick, add a dash of milk (of your choice) to the sauce and stir in.
Add the parsley (save some for serving) to the sauce and allow it to cook through until it reaches your preferred consistency.
Once the chicken breasts are cooked, transfer them to a dish, season the sauce to taste, and pour the sauce on top.
