Ingredients

2 Rashers of Bacon
-
60g (1/2 medium) Avocado
-
1 Large Egg
-
70g Closed Cup Mushrooms
-
30g Spinach
-
10g Butter or Cooking Coconut Oil
Directions
In a large pan, melt the butter / oil on a medium heat and fry the bacon.
Add the mushrooms.
If the pan is big enough, add the egg and sliced avocado once the bacon is almost cooked. If not, wait until it is fully cooked, remove the bacon & mushrooms from the pan, and keep them warm whilst cooking your egg and avocado.
Cook the egg to your preference and lightly brown the avocado.
Serve on a bed of spinach.
