Beef and Horseradish Yorkies

This was part of buffet food for the freezer, created for the Michele's Keto Kitchen workshop
Makes 12 mini Yorkies - each one contains:
108 Calories / 3.5g Carbs / 2.2g Protein / 9.5g Fat
Ingredients

30g Olive Oil, for greasing

25g Arrowroot Powder

3 Medium Eggs
-
90g Double Cream
-
90g Your favourite milk. I use full fat Lactose free

Seasoning
-
100g Roast Beef (I used ready sliced from the deli counter)

12 tsp Horseradish (1 tsp is approx 7g)

And any other garnish, I used a shaving of partly cooked carrot and a little rocket (the rocket cannot be frozen)

Directions
The Batter
Oven 200C
Add a drop of oil to each individual muffin tin, and pop into the oven, till piping hot
Add all your batter ingredients to your bullet / mixer and completely blend
Divide this mixture between the individual muffins, and pop back in the oven for about 20 to 25 minutes, or until well risen and no soggy bottoms!
Allow to cool
Construction
Divide your beef slices between the muffins
Put 1 tsp / 7g Horseradish in each yorkie
This is purely choice, but for extra colour, I peeled a carrot , popped in the microwave for 2 minutes. Allow to cool. Then peel some slices, roll it up so it looks like a rose and place in the yorkies
Final bit of garnish, something green, I used rocket, but if you're freezing don't put this on until out of the freezer and ready to eat
