And it makes a wicked sausage buttie :-)
Traditionally, this is made in a bread tin, but we needed a speedy freeze for class and this works really well. Plus no dangerous carving required (I have form!!).

Ingredients
90 Second Bread / Breadcrumbs

35g Milled Linseed or Ground Almonds

1 Egg
-
1/2 tsp Baking Powder

Seasoning
The Sausage
-
Breadcrumbs - See above ingredients

250g Beef Mince
-
250g Pork Mince
-
75g Water
-
1/2 tsp Nutmeg
-
1/2 tsp Coriander (dried or fresh)

1 tsp salt
-
Pepper
-
Sprinkling of Kashmiri chilli - Optional extra (requested by my husband!)
Directions
Bread crumbs
Add all the bread ingredients to a small bowl and mix well
Pop in the microwave for 1 minute, or until completely cooked
Slice, so you can toast it, then toast till lightly browned
Allow to cool slightly, then whiz up in a Bullet, hand blender or food processor
The Sausage
Line a large baking tray with greaseproof paper - you are not going to cook in this tray, but it will need to go in the freezer
In a large bowl, mix both of your meats till they are well combined
To spread the flavour of the seasonings, push all the meat up around the side of the bowl, please refer to picture
Now add all the ingredients to the well in the meat (including the breadcrumbs)
If you can, get your hands in and mix everything until all the water and seasonings are mixed evenly throughout the mix
Press the mixture into the lined baking tray. Push it in as tightly as possible, to ensure there are no gaps in the mix
Once all packed down in the tin, score 12 sausages, please refer to the picture, cover with cling film and pop in the freezer for an hour *
Once frozen, break up into 12 slices
You can either pop these into a container and put back into the freezer (pop a little greaseproof paper between each slice, to stop them sticking) and cook from frozen, or defrost the night before for a quicker cook
Cooking instructions
If the sausages are already defrosted, shallow fry. Only a tiny bit of oil is needed
Cook on a medium heat for about 4 minutes on each side, until well browned on both sides, and cooked through
