This is a great way to use up leftover veggies.
Makes 4 portions - each portion contains:
184 Calories / 8.1g Carbs / 12.4g Fat / 9.6g Protein / 2g Fibre (already deducted from carbs)
Ingredients

300g Diced Swede - Par Boiled for around 10 minutes or until soft.

200g Leftover Veggies e.g. a combination of cabbage, sprouts, broccoli

100g Shallots - chopped

150g Bacon, cut into thin strips

20g Butter / 20ml Olive Oil

Seasoning - Salt & Pepper

Optional - Handful of Fresh Sage Leaves, roughly chopped
Directions
Heat the butter / oil in a large frying pan over a medium heat.
Add the shallots and chopped bacon and fry for 3 - 5 minutes to allow to soften.
Add the leftover veggies and the sage, combine with the shallots and allow to cook through for 2 - 3 minutes.
Add the diced swede, combine with the rest of the pan and them using a masher start to work around the pan to push the mix together.
Keep the heat low / medium to prevent the dish from burning but you are aiming at creating a nice golden colour.
You can transfer the mix into an ovenproof dish and bake for 10-15 minutes or serve from the pan.
