150g Hard White or Red Cabbage, thinly sliced
50g Carrot, thinly sliced
50g Leek, thinly sliced
50g Pepper, thinly sliced
50g Soured Cream
30g Creme Fraiche
100g Cheddar Cheese
Salt, Pepper and other spices / seasonings of choice
Add the chopped veg to a large mixing bowl.
Add the soured cream and creme fraiche to the bowl and stir to coat the veg. Add more of either soured cream or creme fraiche if your prefer a creamier coleslaw.
Finally, add the grated cheddar cheese and gently stir in the mix. Taste and add the seasonings of choice.
- Swap the soured cream for Greek or Greek-Style yogurt, or mayonnaise.
- Swap the creme fraiche for cream cheese.
- Use another strong cheese if you prefer - manchego or gouda will work nicely.
