Swede Salad

A low carb alternative to potato salad! Thanks to our associate Gemma for sharing this recipe with us :)
Makes 4 portions - each portion contains: 102 Calories / 4.6g Carbs / 3.5g Protein / 7.8g Fat / 0.2g Fibre
As with all UK labels, the carbs listed above are already net carbs - do not subtract the fibre.
Storage:
Fridge - 3-4 days
Freezer: Not recommended
Ingredients

300g Swede (raw weight), chopped into cubes

3 Rashers of Streaky Bacon (or other bacon of choice)

50g Soft Cream Cheese - or, use a combination of cream cheese and mayo (we use Hunter & Gather Mayo)

5g Fresh Chives, chopped (or other fresh herb - we like to use mint)

Splash of Milk (any type) - this isn’t needed if you’re using a cream cheese & mayo combo

Seasoning to taste
Directions
Parboil the swede for 10-15 minutes, until tender. Drain and set aside to cool.
Cook the bacon (we grilled it, but you can fry it if you prefer), then allow the bacon to cool before chopping into small pieces.
In a large bowl, mix together the cream cheese and milk (or mayo).
Add ¾ of the chives and all of the chopped bacon.
Add the swede and mix together to coat with the cream cheese.
Season to taste and transfer to a serving dish. Sprinkle on the remaining chives and enjoy!
