25g Pine Nuts (swap for sunflower seeds for nut free)
40g Fresh Basil (swap for another fresh herb of choice)
25g Grated Parmesan (omit for dairy free or use some nutritional yeast instead)
75ml Olive Oil
1 Garlic Clove
Salt & Pepper
Heat a small pan and add the pine nuts to toast them until golden. Watch them carefully as they will soon burn.
Add the pine nuts, basil, grated parmesan, olive oil and garlic clove to a small food processor and blitz until smooth.
Add seasonings to your taste and then transfer to a storage jar.
