Chocolate Dipped Snowballs

Ingredients

70g Coconut Oil

100g Dessicated Coconut

50g Creamed Coconut (bar), softened

1 tsp Vanilla Extract

Optional: White Chocolate Flavdrops (from MyProtein)

30g 85% Dark Chocolate
Directions
Melt the coconut oil.
Add all of the ingredients (except the chocolate) to a small food processor and mix well.
Taste and add extra flavouring or sweetener if required.
Roll the mix with wet hands into small balls, or divide the mix into silicone ice cube / chocolate moulds.
Place in the freezer to set for 30 minutes.
Whilst setting, melt the chocolate in 30 second blasts in the microwave, or melt over a pan of boiling water. Let the chocolate cool for 5 minutes.
Take the snowballs out of the freezer. You can leave the like this and roll in extra dessiccated coconut for a plain snowball, or dip the bottoms into the melted chocolate and place on a plate lined with greaseproof paper.
Let them set for at least 1 hour in the fridge. Enjoy! We find they're even nicer a few days later after being in the fridge :)
