Ingredients

30g Butter
-
1 tsp Vanilla Extract

120g Ground Almonds
-
1 Large Egg

Sweetener, to taste (stevia & erythritol, or monkfruit & erythritol blend) e.g. Truvia, Natvia, Pure Via, Lakanto. (click here for recommended brands & conversions)
Directions
Preheat the oven to 160°C.
Melt the butter in the microwave or in a saucepan on a low heat.
Add the rest of the ingredients and mix.
Divide the dough into small balls, then mould these into cookie shapes on a baking tray lined with greaseproof paper.
Bake for 10 minutes. The cookies will become crispier as they cool down.
Store in the fridge for 3-4 days, or freeze.
