What is this crust? I would say it's across between a pastry & bread. Soft in the middle and crusty on the outside

This is part of a range of recipes "1 Dish 4 Ways". For this recipe, 1 Pie Crust 4 different fillings.....the other 3 - , Mince Beef & Leek Pie, Chicken & Vegetable in Gravy and finally Creamy Chicken & Ham Pie

This is a high fat, high calorie recipe, so I've divided it into 3 categories: Whole recipe macros, 4 portion macros and 6 portion macros (the macros are including the pie crust)

Chicken & Vegetable in Gravy Pie

For the whole recipe:
4898 Calories / 56g Carbs / 227g Protein / 413g Fat

Makes 4 individual portions - each portion contains:
1225 Calories / 14g Carbs / 57g Protein / 103g Fat
~
Makes 1 big pie & can be divided into 6 smaller portions - each portion contains:
816 Calories / 9.3g Carbs / 38g Protein / 69g Fat

Ingredients
Pie Crust
- 1 batch Pie Crust (follow this link to take you to the recipe)
The Filling
The Mash

400g Celeriac - Small roughly chopped (if you don't like celeriac, you could use swede instead - macros are at the bottom of this recipe)

20g Butter
-
1/2 tsp Salt
-
1/4 tsp Pepper
The rest of the filling
-
400g Spinach - small roughly chopped
-
200g Feta - small roughly chopped
-
100g Leeks - small roughly chopped
-
100g Mushrooms - small roughly chopped
-
100g Sundried Tomatoes - Small roughly chopped (Mine were 9.5 carbs per 100g)

100g Cheddar - Grated
-
2 tsp Oregano
-
2 tsp Garlic
-
30g Olive oil
-
Salt & Pepper (I added 1/2 tsp salt & 1/4 tsp pepper
Directions
Pie Crust
- 1 batch Pie Crust (follow this link to take you to the recipe)
The Filling
First the Mash
Start by boiling or steaming the Celeriac or swede (I prefer to steam, as I really feel it keeps its full flavour) This will take about 15 - 20 minutes
Once cooked add all mash ingredients to a food processor (this can be done with a potato masher too) and blitz until smooth
Now put this to one side
The rest of the filling
Meanwhile in a large non stick saucepan, add the olive oil & add the leeks. Fry for about 5 minutes, until translucent but not browned.
Add the mushrooms and fry for 2 minutes
Now add spinach and garlic. Cook until it's wilted. this will take all of 2 - 3 minutes
Take off the heat and add all the other filling ingredients, including the mash & mix well
Now pour / spoon into your prepared Pie Crust base and go back to the Pie Crust recipe and instruction no.8 onwards
