What is this Dough? I say it's really fab & very versatile. This recipe, is just the dough part. It's the recipe links that show some of its potential. Also it depends what you are making, as to how many portions you can get out of this. So I've put the macros for the whole recipe & 12 individual portions

For the whole recipe:
1462 Calories / 12g Carbs / 65g Protein / 126g Fat

This can make as many portions as you want (within reason), depending on what you would like to make. But here are the macros for 12 individual portions - each portion contains:
122 Calories / 1g Carbs / 5.4g Protein / 11g Fat

Tips & Equipment:
Large bowl & spatula
Top tip from Helen Bouchard - wet your hands whilst working this dough, it's very sticky, but she loved it :-)
Ingredients

100g Ground almonds
-
1 tsp Xanthan Gum
-
1 tsp Baking powder
-
1/4 tsp Salt
-
50g Ready grated Mozzarella
-
20g Mature Cheddar, grated
-
25g Melted butter - allow to cool a little before adding to the dry mix

40g Cream cheese
-
2 Eggs
Directions
Add all the dry ingredients (including the mozzarella and cheddar) and mix.
Add to the dry mix, all the wet ingredients and mix well, until you have a nice wet dough
Top tips reminder - this dough is very sticky, so make sure you have a bowl of water close to hand, to help work it - hands and work top!
