Because this recipe doesn't contain egg, it won't rise like our usual loaves. It's a dense bread, but it's lovely when toasted and paired with butter and homemade jam!
Makes 12 slices - each slice contains: 115 Calories / 2.8g Carbs / 3.7g Protein / 9.5g Fat

Ingredients

150g Ground Almonds

30g Coconut Flour
-
20g Psyllium Husks (the actual husks, not the powder)

1/2 tbsp Baking Powder

1/4 tsp Salt
-
15ml Olive Oil
-
5ml Apple Cider Vinegar
-
240ml Warm Water
Directions
Preheat the oven to 180c.
Mix all the dry ingredients in a large mixing bowl.
Add the oil and apple cider vinegar and mix well.
Add the water and stir.
Kneed the mix for 2 - 3 minutes until it creates a dough.
Place in a lined loaf tin (we use a small 9 cm x 16 cm tin) and bake for 30 - 35 minutes. Take it out of the tin and finish it in the oven for another 10 minutes to give it a better crust.
