We've adapted our 'Zucchini Bread' (yes, we know that's American, but it sounds better than 'Courgette Bread'!) to create this delicious flatbread. Xanthan Gum is often found in the Free From section of UK supermarkets.
Makes 8 portions - macros per portion:

Ingredients

100g Courgette, grated

50g Ground Almonds or Milled Linseed

35g Coconut Flour

3 Large Eggs
-
60g Grated Mozzarella (we use pre-grated)

1 tsp Garlic Powder

1 tsp Mixed Herbs

1/4 tsp Xanthan Gum

1/4 tsp Salt
-
1-2 Garlic Cloves, finely chopped (or 5g Garlic Puree)

20g Butter (we like to use salted), melted

Directions
Preheat the oven to 180°C.
Mix the ground almonds, coconut flour, xanthan gum and salt together in a bowl.
Add the eggs, grated courgette, mozzarella and mixed herbs. Mix and add any other seasonings / spices at this point.
Transfer the mix onto a lined pizza tray. Push the mix out as far as you can (approx. 10" diameter) and bake for around 20-25 minutes or until golden brown.
For the garlic butter, gently heat the butter in a small pan. Add the garlic and fry until the garlic starts to turn nut brown. Add the butter to the baked bread and brush over the top.
