Who doesn't need Tortillas in their life?! Credit for this recipe goes to Christopher Davies!
This is a very quick recipe to put together, especially if you have a food processor.
No more than 20 seconds cooking time per wrap, depending on how thin they are.
These make a very good side to a stew or a curry as well :-)
Makes 4 portions - each portion contains:
178 Calories / 3.6g Carbs / 7.1g Protein / 15.2g Fat
Ingredients

110g Ground Almonds

3 tsp Xantham Gum
-
1 tsp Baking Powder
-
1 Large Egg
-
15g/ml Water
-
Seasoning
Directions
Add all ingredients to food processor
Blitz in food processor for around 10-15 second until dough ball forms.
Place dough ball in cling film, wrap it and then knead inside the film for around 1 minute.
Rest dough for 15 minutes
After resting weigh the dough and then weigh it into 4 equal size balls.
Roll your wraps out to the desired size and as flat as possible, between 2 sheets of greaseproof paper or silicone sheets
Get your pan/hot plate as hot as possible.
Place wrap in pan after about 5 seconds Flip over and cook for another 5 seconds.

Recipe Notes
I find it easier to peel your wrap off the silicone sheet before putting it in the hot pan. That way it releases much quicker into the pan to cook. Timing is very quick and important with these. Literally 5 seconds at the most on each side is all you need
