Broccoli & Cauliflower Cheesy Bake 4 ways - Base Recipe
This is a delicious recipe on it's own, but it's also the base recipe that links into 4 other recipes. It's part of a range of recipes. "1 recipe 4 ways"
To warn you, I do like large portions, so I've given you the macros for 6 portions as well :-)
Keep the stalks / leaves of the broccoli & cauliflower to make rice!
We've included alternatives for the mascarpone and cream to make this dish lighter on the fat if needed.

15g Olive oil
100g Fresh Leeks, finely chopped
3 Garlic Cloves, finely chopped
400g Cauliflower Florets
400g Broccoli Florets
200g Mascarpone Cheese (or cream cheese)
200g Double Cream (or soured cream)
100g Milk (I used full fat Lactose free milk)
1 tsp Mustard powder
150g Mature Cheddar (or other grated cheese) 50g for the sauce & 100g for the bread crumb topping
1 batch 90 Second Bread
Salt & Pepper
Preheat the oven to 180°C.
Break the cauliflower and broccoli into bite-sized pieces, rinse, and add to the saucepan, or I prefer to steam. Cover the pan and allow to cook on a medium heat, for 10 - 15 minutes - basically cooked, but still with a little crunch. Now drain, or if steaming take off the heat and remove the lid
Melt the butter & oil in a large saucepan over a medium heat and add the chopped leeks and cook for about 5 minutes. We are cooking but not browning. Then add the garlic and fry for a further couple of minutes
To a bowl add the mascarpone, cream (or alternatives), milk, 50g grated cheese, mustard, seasoning and stir
Transfer all of this & the broccoli and cauliflower to the pan with the leeks and gently combine
Now transfer to an oven-proof dish.
Make up your 90 Second Bread, according to the recipe instructions. Slice and pop in the toaster, for extra crispness. Allow to cool, slightly
Blitz your bread until you have bread crumbs and mix with your 100g grated cheese

Take the bread crumb & cheese mix and sprinkle evenly over the top of your casserole dish and bake for about 15 minutes or until golden brown and piping hot
