Keep the stalks / leaves of the broccoli & cauliflower to make rice!
We like to boost the protein content of this dish with the addition of bacon lardons, or we'll reduce the portion size and use it as a side dish for a Sunday roast :D
We've included alternatives for the mascarpone and cream to make this dish lighter on the fat if needed.
Makes 4 portions - each portion contains;

Ingredients

20g Butter
-
80g Fresh Leeks, finely chopped

2-3 Garlic Cloves, finely chopped

400g Cauliflower Florets
-
200g Broccoli Florets
-
100g Mascarpone Cheese (or cream cheese)

125g Double Cream (or soured cream)
-
100g Mature Cheddar (or other grated cheese)

Optional: 300g Bacon Lardons
Directions
Preheat the oven to 180°C.
Melt the butter in a large saucepan over a medium heat and add the chopped leeks and garlic.
If including the bacon, add this now and cook for 2-3 minutes.
Break the cauliflower and broccoli into bite-sized pieces, rinse, and add to the saucepan. Cover the pan and allow to cook on a medium heat for 5 minutes.
Add the mascarpone and cream (or alternatives) and gently combine.
Transfer the contents of the dish into an oven-proof dish. Sprinkle evenly with grated cheddar and bake for 30-40 minutes or until golden brown.
