This recipe came from a request for a low carb, homemade veggie burger. The mix can be baked in a loaf tin or little burger tins like these, and there's 30g protein per portion!
Makes 2 portions - each portion contains:
484 Calories / 5.9g Carbs / 30.2g Protein / 36.5g Fat
Ingredients

200g Halloumi / Grilling Cheese

50g Red Pepper, diced

50g Courgette, diced

25g Shallots / Leek, finely chopped

2 Large Eggs
-
10g Coconut Flour
-
15g Chopped Fresh Herbs e.g. Coriander, Thyme, Parsley
-
1/2 tsp Garlic Powder / Chilli Flakes / Smoked Paprika - you choose!
Directions
Preheat the oven to 180°C.
Blitz the halloumi / grilling cheese in a food processor to a fine crumb.
In a large bowl, combine all of the ingredients - you could do this in the food processor if you wanted finely diced veg, but don't over-process it as it will go watery.
Place the mix in a lined small loaf tin (ours is 9cm x 15cm) and bake for 30 minutes or until golden and firm. Or, divide the mix into little round dishes (ours are 2.5") and bake for around 15 minutes.
