This is a lovely vegetarian alternative to a classic Bolognese, without processed meat replacements.
Makes 4 portions - each portion contains:
497 Calories / 10.1g Carbs / 27.9g Protein / 37.8g Fat
Ingredients

40ml Olive Oil

450g Halloumi / Grilling Cheese, diced

100g Shallots, diced
-
100g Red Pepper, diced
-
250g Courgette, diced
-
150g Aubergine, diced
-
400g Chopped Tomatoes

1 tsp Garlic Powder

3-4 Fresh Basil Leaves
Directions
Heat the olive oil over a medium heat in a large frying pan / wok. Add all the vegetables and halloumi and fry for 2-3 minutes. Keep everything moving as the halloumi will stick to the pan quite easily.
Once the vegetables have started to soften and brown, add the chopped tomatoes, basil and garlic powder.
Stir, bring to boil and then reduce the heat. Allow to simmer with a lid / cover for 15-20 minutes over a medium heat.
Remove the cover and turn up the heat for the final few minutes to allow some of the moisture to cook away.
