Olive & Feta Salad
1 Bag of Rocket Leaves (80-100g)
100g Feta cheese, chopped into bite size cubes
50g Olives of your choice
1-2 Garlic Cloves
A pinch of Pink Himalayan / Rock / Sea Salt
25ml Extra Virgin Olive Oil
Juice of half a lemon
In a bowl add all the rocket, olives and feta and mix.
In a pestle and mortar, crush the garlic with a little salt.
Add the the olive oil and lemon juice to the garlic.
Mix and now add the salt and pepper to taste. Lots of black pepper isn't essential but it can make the salad slightly spicy.
Pour the lemon mixture over the salad, mix through, and eat straight away. The salad can be prepared in advance - just don't add the dressing until you are ready eat.
