Pesto or Garlic MKD Star Bread

This is a great tear & share type dish. Micheles husband loves this in his lunch box.
Equipment:
Silicone sheets
Rolling pin
Bullet, food processor or hand blender
Pizza baking tray
Makes 8 portions. Macros are per portion.
Pesto star: 253 Calories / 1.8g Carbs / 11.6g Protein / 21.8g Fat / 1.1g Fibre (already deducted from carbs)
Garlic star: 176 Calories / 1.7g Carbs / 8.5g Protein / 14.7g Fat / 0.6g Fibre (already deducted from carbs)
Ingredients

170g Grated Mozzerella
-
70g Milled Linseed / Ground Almonds

30g Cream Cheese
-
100g Spinach
-
50g Olive Oil
-
50g Mixed Nuts
-
50g Grated Parmesan - save 5g for the topping

1/4 tsp Salt & Pepper

1/2 tsp Garlic Powder or 1 Garlic Clove

100g Cream Cheese
-
30ml Double Cream
-
1 tsp Dried Herbs
-
1/2 tsp Garlic powder
-
5g Grated Parmesan for the topping

MKD - Michele's Keto Dough
Pesto
Or Garlic Filling - This is Louis' garlic sauce
Directions
Preheat the oven to 180°C.
Pesto
Add all your ingredients to the blender and blend
Garlic Filling
Add all the ingredients to a bowl and mix
MKD
Add all the ingredients to a microwave bowl, and heat in the microwave for 60-90 seconds.
Stir well until a doughball forms.
Construction
Weigh the dough and divide into 3 equal chunks.
Roll out each dough ball into a large circular shape, that fits your pizza baking tray - it may need 10 -20 seconds in the microwave, to soften the dough before rolling - 25cm diameter*
You now have 3 circular dough shapes
Line your baking tray with greaseproof paper and put the first circular layer on this
Spread half of the pesto or garlic filling, all over, but leave a cm gap at the edge
Pop the second rolled out circular MKD on top of this pesto or garlic covered layer
Again spread the rest of the pesto or garlic on this second layer of MKD
Finally put the 3rd layer of MKD on top, so you will have 3 layers of MKD and 2 layers of pesto or garlic filling
Star construction
Put a small glass or ramakin dish in the centre of the MKD, and slightly push in to the dough to make a small indentation in the centre - refer to pictures
When cutting the dough into the strips for the stars do not cut all the way to the centre, only go up to the indentation
There will be 16 strips, so 8 star points. 2 star points per portion
A pizza wheel works really well here, or I prefer scissors
Now grab a strand and twist only the once and twisting outwards to the right (the opposite direction of the strand it's going to be pushed back together)
Do the same with the strand to the left, only twist in the opposie direction (so twist to the left) and now pinch the 2 strands together - refer to pictures
Season with whatever you like…. I chose Parmesan and black pepper this time, but chilli flakes would be great too - tip to make these dry parmesan / black pepper stick to the top, you could paint the top with egg
Bake 15 -25 minutes or until golden.
Keep an eye on it after 20 minutes, mine took 22 minutes
Make sure its lovely and crisp on the base before attempting to move it. If hot, you will need a spatula to move each slice
It will stiffen up when cool and a quick boost in the panini press, oven or microwave if you want to eat it hot later ...enjoy :-)
