What is this crust? I would say it's across between a pastry & bread. Soft in the middle and crusty on the outside

This is part of a range of recipes "1 Dish 4 Ways". For this recipe, 1 Pie Crust 4 different fillings.....the other 3 - , Mince Beef & Leek Pie, Spinach & Feta Pie and finally Creamy Chicken & Ham Pie

This is a high fat, high calorie recipe, so I've divided it into 3 categories: Whole recipe macros, 4 portion macros and 6 portion macros (the macros are including the pie crust)

For the whole recipe:
4773 Calories / 46g Carbs / 301g Protein / 372g Fat

Makes 4 individual portions - each portion contains:
1193 Calories / 11g Carbs / 75g Protein / 93g Fat

Makes 1 big pie & can be divided into 6 smaller portions - each portion contains:
795 Calories / 7.6g Carbs / 50g Protein / 62g Fat
Ingredients

1 batch Pie Crust (follow this link to take you to the recipe)

600g Chicken - Small roughly chopped

100g Swede - Small roughly chopped

100g Leeks - Small roughly chopped

100g Peppers - Small roughly chopped

100g Celery - Small roughly chopped

100g Mushrooms - Small roughly chopped

50g Peas
-
40g Butter
-
100ml Double cream
-
2 Chicken stock cubes
-
300ml Boiling water
-
2 tsp Herbs
-
1/2 tsp Garlic
-
Salt & Pepper (I added 1/2 tsp salt & 1/4 tsp pepper)

The Filling
Pop the chopped up swede in a microwave bowl, with a little water and microwave for about 5 - 7 minutes. This is to speed up the cooking time of this vegetable, as the swede takes the longest to cook
Add the butter to a large pan and fry the leeks for about 5-10 minutes, until it's softened but not browned (almost translucent)
Now add the chicken & fry for a further 5 minutes
Add all the vegetables (apart from the peas) & the garlic and herbs and stir through and fry for a further 5 minutes
Add to the pan stock cubes, boiling water and seasoning
Allow to simmer for about 20 - 30 minutes, until all the vegetables are cooked
Add the cream & peas and stir through
If you'd like to thicken the sauce either cook for a little longer, or add some chia seeds which acts as a lovely thickening agent
- Now pour into your prepared Pie Crust base and go back to the Pie Crust recipe and instruction no.8 onwards
