Directions
Heat the oil in a frying pan / wok over a gentle heat.
Add the chicken and brown on all sides. Allow to cook over a medium heat for 5 minutes.
Move the chicken to the side of the pan and add the avocado.
Handle the avocado gently and fry until golden on all sides.
Serve on a bed of spinach.
