Chicken & Avocado Salad

Don't knock fried avocado until you've tried it. Serve with homemade mayonnaise or ketchup!
Makes 1 portion:

100g Diced Chicken Breast
1/2 (around 60g) Avocado, sliced
15ml Olive Oil
Handful of spinach
Heat the oil in a frying pan / wok over a gentle heat.
Add the chicken and brown on all sides. Allow to cook over a medium heat for 5 minutes.
Move the chicken to the side of the pan and add the avocado.
Handle the avocado gently and fry until golden on all sides.
Serve on a bed of spinach.
