If you're not a fan of garlic, swap this out for a pinch of herbs or an alternative seasoning like chilli flakes or paprika.

180g (Medium / Large) Chicken Breast
20g Milled Golden Linseed
1/2 tsp Dried Mixed Herbs
30g Soft Cream Cheese
1 Garlic Clove (crushed) or 1/2 tsp Garlic Paste
Salt & Pepper
Preheat either the oven or air fryer to 180°C.
Mix the egg in a bowl that is big enough to fit the chicken breast in.
Mix the linseed with herbs & seasoning in another bowl (again, the bowl needs to be big enough for the chicken).
Slice the chicken breast in half length-ways, on the thickest side of the fillet. be careful not to slice all the way through.
Mix the cream cheese and garlic in a small bowl. Spread the cream cheese on one side of the chicken fillet and fold the other side over.
Dip the chicken fillet into the egg and ensure that both sides are coated.
Lift the chicken from the egg mix and allow any excess to drain off. Transfer the chicken to the linseed mix and again coat both sides of the crumb.
Place in a baking dish and pop in the oven for 25-30 minutes. Depending on the thickness of the fillet it may require a little longer. To ensure it is fully cooked, pierce the chicken with a skewer - any liquid from the chicken should be clear.
