Sandie's Golden Kebabs
300g Chicken Mini Fillets
100g Courgette, cut into 1 cm slices
100g Aubergine, cut into 1 cm slices
100g Button Mushrooms
100g Green Pepper, sliced into small chunks
20ml Olive Oil
1/2 tsp Ground Turmeric
2 Garlic Cloves / 5g Garlic Puree
1/2 inch Fresh Ginger / 5g Ginger Puree
Obviously if you're not a fan of one of the veggies then there are plenty of alternatives - Broccoli / Cauli Florets, Asparagus or even a few baby plum tomatoes.
Create your kebabs on wooden or metal skewers and set them on tray ready for the marinade.
Use a small food processor / nutri-bullet blender or a pestle and mortar to create a paste with the oil, turmeric, garlic and ginger
Spoon the paste over the kebabs. Hold some back for part way through the cooking process.
These work great in our Air Fryer where they took about 15 minutes at 200°C.
You can oven bake these, again 200°C for about 25-30 minutes. Check that the chicken is fully cooked.
Or fry in a griddle pan over a medium heat for around 10-15 minutes and get that authentic BBQ scoring.
Part way through the cooking process, spoon over the remainder of the paste.
