The best way to cook these is to steam the duck legs and then quick-roast them as this will ensure you get tender meat with crispy skin. Liquid Aminos / Coconut Aminos is available in most UK supermarkets and health food shops, potentially in the 'free from' section.
Makes 2 portions - each portion contains:

Ingredients
2 Duck Legs (we used the Gressingham pack from Morrisons - 2 legs per pack)
25g Spring Onions, finely chopped
1/2 tsp Black Peppercorns
10g Fresh Ginger, peeled & finely chopped
1 Large Egg White
15ml Soy Sauce / Liquid Aminos / Coconut Aminos
Directions
If you have a pestle & mortar, you can use this to create the marinade. Otherwise, a small food processor / grinder can be used.
Add the sliced spring onions, black peppercorns and finely chopped ginger and, using the pestle & mortar, crush the peppercorns and combine with the other ingredients to create a paste.
Add the soy sauce (or alternative) and the egg white and stir.
Using a sharp knife, score the duck legs 3 or 4 times through the skin and into the meat and place them in a sealable food bag.
Add the marinade to the bag and massage it into the meat. Seal the bag and refrigerate overnight or for at least 4 hours.
Steam the legs for around 60-90 minutes, ensuring that you don't allow the steamer to run dry.
Once steamed, transfer them to a hot oven preheated to 220°C for 25-30 minutes.
