This is another recipe that can easily be adapted to accommodate any lose ends of veg that need using up.
Makes 2 portions - each portion contains:
565 Calories / 9.7g Carbs / 37.6g Protein / 41.4g Fat
20g Butter or 20ml Olive Oil
100g Leeks or Shallots, finely sliced
100g Red Bell Pepper, finely sliced
100g Broccoli Florets, chopped
1-2 Garlic Cloves, finely sliced
6 Large Eggs
1 tsp Smoked Paprika
50g Diced / Sliced Chorizo
50g Mature Cheddar, grated
Preheat the oven to 180°C.
Heat the butter / oil in a medium frying pan and add the leeks / shallots, peppers, broccoli and garlic. Fry over a gentle heat for 3-5 minutes.
Transfer the veg to an oven proof dish.
Beat the eggs in a bowl with the smoked paprika and any other seasonings of your choice.
Add the beaten eggs on top of the veg and then sprinkle the chorizo into the mixture.
Sprinkle the grated cheddar on top.
Bake for 35-45 minutes depending on the depth of the dish.
