2 Large Eggs
One portion (around 10g) of Homemade Pesto.
Heat a small non-stick pan over a gentle heat.
Add the pesto, spreading it around the pan with the back of a spoon.
Allow the pesto to heat gently (as the pesto is made of olive oil, you want to keep it on a low heat), then crack the eggs into the pan.
Fry the eggs to your preference (we cover the pan with a lid to help them cook on top).
- A good non-stick pan is ideal. We have a small pan which is perfect size for two eggs 😀.
- Serve on some toasted bread, with bacon or just eat 'em straight out of the pan!
