A fantastic centrepiece for a family roast. We served this on buttered cabbage :)

Ingredients

1 Boneless Lamb Shoulder

A handful of Fresh Rosemary or Thyme Sprigs (or a bit of both)

5-6 Garlic Cloves

Olive Oil
Directions
Preheat the oven to 150c.
Push a sprig of rosemary / thyme into each end of the rolled lamb joint plus 2 or 3 more under the string around the joint.
Lightly crush the garlic cloves - you don't need to remove the skins. Push 1 or 2 into each rolled end of the joint.
Place the joint on a sheet of foil, drizzle with a little olive oil and add any remaining garlic cloves and extra sprigs of herbs.
Wrap the joint tightly and roast for 3 hours.
Remove / open the foil and roast for a further 30-45 minutes at the same temp.
